This is significant because the spring water used to distill their Sake, Shōchū, and Whisky and bring it to proof has \u003cem\u003e\u003cstrong\u003efiltered through volcanic \u003c\/strong\u003e\u003c\/em\u003estone for eons — resulting in significant purity and a unique, soft mineral composition.\u003cbr\u003e\r\n\u003cbr\u003e\r\nThe Matsui Shuzo Distillery keeps \u003cem\u003e\u003cstrong\u003ea low profile.\u003c\/strong\u003e\u003c\/em\u003e It’s almost enigmatic with no visitor center or direct sales. But the line Whiskies that comes out of their warehouses are very highly regarded — including ten Single Malts under the Kurayoshi brand and five grain Whiskies under their Tottori nameplate. All of them very popular with the discriminating dram-lovers across \u003cem\u003e\u003cstrong\u003ethe Land of the Rising Sun.\u003c\/strong\u003e\u003c\/em\u003e\u003cbr\u003e\r\n\u003cbr\u003e\r\nA lot of Whisky lovers argue that twelve years is\u003cem\u003e\u003cstrong\u003e the perfect age for a Malt. \u003c\/strong\u003e\u003c\/em\u003eTaste is such a personal thing that’s it’s hard to say. That leads to \u003cem\u003e\u003cstrong\u003e\"malternatives,\"\u003c\/strong\u003e\u003c\/em\u003e where producers import and dilute Scotch Whisky and age it in Japanese wood. But Kaiyo Mizunara Whisky is \u003cem\u003e\u003cstrong\u003eas Japanese as Godzilla\u003c\/strong\u003e\u003c\/em\u003e on a TV game show where the furniture is made of chocolate. Okay, that's a tiny lie, to be frank. This Whisky doesn't spend its entire maturing period in Japan. The Kaiyo casks are whisked on a boat and \u003cem\u003e\u003cstrong\u003eleft to age somewhere on the ocean \u003c\/strong\u003e\u003c\/em\u003e(Kaiyo means ocean!). The reason is that the intensity of the Mizunara oak influence on the flavor wains a bit after a while, so the Spirit needs a maritime boost. Which is admittedly... \u003cem\u003e\u003cstrong\u003eBadass. \u003c\/strong\u003e\u003c\/em\u003e\u003cbr\u003e\r\n\u003cbr\u003e\r\nNow this \u003cem\u003e\u003cstrong\u003eFunanori\u003c\/strong\u003e\u003c\/em\u003e (Japanese for sailor with some fun in it) is a stronger and more intense version of the regular Kaiyo Mizunara Oak Japanese Whisky. In essence, the producers amped up all the good things of the original: notes of orange peel and oak spices greet you with riotous bravado, the sandalwood and vanilla stoutly indulge your palate, while the finish is riveted and oaky.
